Description

TotalBase is an all-in-one gelato and sorbet base from PreGel, designed to handle both hot and cold process methods. A single bag delivers complete structure for a milk-based gelato or a fruit sorbet, letting one product cover two production styles.

The blend pairs dehydrated glucose syrup and dextrose with fully hydrogenated coconut oil, nonfat milk, and a full emulsifier and stabilizer package. The result is a clean, neutral base with reliable body and smooth scoop release that lets pastes, purees, and inclusions carry the flavor profile.

PreGel offers three other gelato bases that focus on different production styles. Base Premium is cold-process only and mixes with just water, Base Sublime is hot-process only and built on high milk solids for the dense, matte traditional Italian style, and Base Vegan is a fully plant-based formula built on rice and cocoa butter for vegan gelato made with plant milk or water.

Instructions

Cold Process
  • Whisk 100 g (3.5 oz) TotalBase with 220 g (7.8 oz) sugar and 1 kg (1,000 g, or 35.3 fl oz) whole milk or water until fully dispersed.
  • Stir in your chosen flavoring paste, fruit puree, or inclusions.
  • Process through a batch or continuous freezer.
Hot Process
  • Whisk TotalBase, sugar, and milk or water together.
  • Pasteurize at 85°C (185°F), then cool and age before churning.
  • Add flavoring and process through a batch or continuous freezer.
Storage
  • Keep the dry powder in a cool, dry place at 15–20°C (59–68°F), RH ≤ 65%.
