Description

Base Vegan is a fully plant-based gelato base from PreGel of Italy, built around rice powder and cocoa butter. The formula produces a rich, creamy vegan gelato that holds together more like a traditional dairy scoop than a typical water sorbet.

The fat content from cocoa butter, combined with rice powder, alimentary fibers, and a clean stabilizer-emulsifier package, gives the finished product real body and a smooth mouthfeel that plant-based sorbets often lack. Use it with plant milk for a creamier gelato profile or with water for a lighter scoop. Pair with vegan-suitable flavoring pastes or fruit purees to build a full plant-based menu.

PreGel offers two other plant-based or fruit-focused options. Fruttosa is a simpler fat-free fruit sorbet base that contains a small amount of nonfat milk. Fruttosa Milk Free is the dairy-free version of Fruttosa for plant-based sorbet and soft serve, lighter in body than Base Vegan since it has no added fat.

Instructions

  • Dry mix 150 g (5.3 oz) Base Vegan with 200–270 g (7.1–9.5 oz) sugar or cane sugar.
  • Add 1 kg (1,000 g, or 35.3 fl oz) boiling water or plant-based milk and whisk vigorously until fully dispersed. If you prefer, pasteurize the mix at 85°C (185°F) instead.
  • Let the mix rest, then stir in your chosen vegan flavoring paste or fruit puree.
  • Process through a batch or continuous freezer.
  • Store the dry powder in a cool, dry place at 15–20°C (59–68°F), RH ≤ 65%.
