Description

Base Premium is a cold-process gelato base from PreGel, requiring only water for mixing. It is designed for shops and high-volume producers who want creamy, well-structured gelato without pasteurizing or scaling separate milk, sugar, and stabilizer components.

The formula combines milk solids, refined coconut oil, sweet cream solids, sugar, dextrose, and a balanced stabilizer-emulsifier system into a single 2.2 lb bag. The resulting gelato carries a clean dairy character, smooth body, and dependable freeze profile that holds up in display cases. It runs straight through a continuous or batch freezer once whisked with water and your choice of paste, fruit, or inclusions.

PreGel offers three other gelato bases that take different approaches. TotalBase works in either hot or cold process and mixes with milk or water, Base Sublime is a hot-process formula built on high milk solids for the dense, matte traditional Italian style, and Base Vegan is a fully plant-based formula built on rice and cocoa butter for vegan gelato made with plant milk or water.

Instructions

  • Whisk 1 kg (2.2 lbs) Base Premium with 2 kg (2,000 g, or 70.5 fl oz) cold water until fully dispersed.
  • Add your chosen flavoring paste or fruit and any inclusions.
  • Process through a batch or continuous freezer.
  • Store the dry powder in a cool, dry place at 15–20°C (59–68°F), RH ≤ 65%.
