Description

SuperNeutro Milk is a hot-process stabilizer and emulsifier from PreGel of Italy, formulated specifically for milk-based gelato. The blend pulls double duty in one bag, combining the texturizing pull of locust bean gum, guar gum, and carboxymethylcellulose with the emulsifying lift of mono- and diglycerides.

A meaningful share of skimmed milk powder (25%) is built into the formula, which reinforces body and creaminess in the finished gelato beyond what a pure gum blend would deliver. The result is a dense, smooth scoop with reliable shape retention in the display case, dosed at a low rate so it integrates without affecting flavor.

For fruit sorbet and water-based recipes, the companion SuperNeutro Fruit covers the same role on the dairy-free side of the production board. PreGel's Neutro is the simpler, lower-dose all-purpose stabilizer in the same family.

Instructions

  • Dose about 10 g per kg (1 oz per US gallon) of finished mix.
  • Dry mix SuperNeutro Milk with sugar, then whisk into the milk along with the rest of your dry ingredients.
  • Pasteurize the mix at 85°C (185°F), then cool and let it rest before churning.
  • Store the dry powder in a cool, dry place at 15–20°C (59–68°F), RH ≤ 65%.
