Description

SuperNeutro Fruit is a stabilizer and emulsifier from PreGel of Italy, formulated specifically for fruit sorbet and water-based gelato. The dairy-free blend combines guar gum, carboxymethylcellulose, and starch with mono- and diglycerides, giving you texturizing and emulsifying performance in one bag.

The formula runs cleanly in both hot and cold process, which makes it a flexible fit whether you are pasteurizing a citrus sorbet or building a fast cold-process berry recipe. The finished product picks up better body, smoother mouthfeel, and steadier behavior in the display case, all without affecting fruit flavor.

For milk-based hot-process gelato, the companion SuperNeutro Milk covers the dairy side of the production board. PreGel's Neutro is the simpler, lower-dose all-purpose stabilizer in the same family.

Instructions

  • Dose about 10 g per kg (1 oz per US gallon) of finished mix.
  • Dry mix SuperNeutro Fruit with sugar, then whisk into the water, fruit puree, or milk along with the rest of your dry ingredients.
  • Process the mix through your pasteurizer or batch freezer as usual. The formula works in either hot or cold process.
  • Store the dry powder in a cool, dry place at 15–20°C (59–68°F), RH ≤ 65%.
