Description

Panna Cotta Base from Pastry Star turns whole milk and heavy cream into a classic Italian panna cotta with a quick cook and a few hours in the cold. It is made with natural ingredients and sets on agar and carrageenan rather than gelatin.

The result is a trembling, satin smooth custard that unmolds clean and keeps a soft wobble on the plate. Its flavor stays sweet and quiet, a blank canvas for a pool of fruit coulis, a thread of caramel, or a whisper of coffee.

Instructions

Preparation
  • Combine 300 g (10.5 oz) base, 900 g (31.7 oz) whole milk, and 600 g (21 oz) heavy cream, then blend with an immersion blender for one minute.
  • Over medium heat, bring to a boil and stir constantly for five minutes.
  • Remove from the heat and blend again with an immersion blender for one minute.
  • Pour into molds and refrigerate about two hours, until set.
Storage
  • Store in a cool, dry place. Do not refrigerate.
