Description

Fruttosa is a powdered sorbet base from PreGel, formulated for water-based fruit sorbet or milk-based fruit sherbet. The fat-free blend carries a slightly sweet, neutral profile that puts the fruit pastes or purees in the foreground.

The formula combines dextrose with guar gum, locust bean gum, carrageenan, and a light emulsifier blend, plus a small amount of nonfat dry milk for body. It runs in either hot or cold process and produces a smooth, dense sorbet with solid shape retention in the display case. Pair with any of PreGel's Fortefrutto fruit pastes or your own purees.

PreGel offers two related fruit and plant-based options. Fruttosa Milk Free is the dairy-free version of this same base for plant-based sorbet and soft serve. Base Vegan is a richer, fully plant-based gelato base built on rice and cocoa butter for a creamier scoop than a traditional sorbet.

Instructions

  • Whisk 50 g (1.8 oz) Fruttosa with 300 g (10.6 oz) sugar and 1 kg (1,000 g, or 35.3 fl oz) water or whole milk.
  • Add your chosen fruit paste or puree and any inclusions.
  • Process through a batch or continuous freezer. The formula works in either hot or cold process.
  • Store the dry powder in a cool, dry place at 15–20°C (59–68°F), RH ≤ 65%.
