PreGel Lemon 50 is a dual purpose powdered base and flavoring with a bright, zesty lemon profile, made in the United States. It works as a complete sorbetto base when combined with sugar and water, or as a concentrated flavoring powder dosed into gelato, frozen yogurt, mousses, and pastry creams.

The flavor is clean and tart with the snap of real citrus acidity, built around dehydrated lemon juice and natural and artificial flavors. As a cold process product, it eliminates the seasonality, juicing labor, and zest variability of working with fresh lemons, while giving consistent flavor and texture batch to batch. The dual use format means one ingredient covers both base and flavoring needs across a varied menu.

Instructions

As a Sorbetto Base
  • Combine 50 grams Lemon 50 with 400 grams sugar and 1000 grams (1 liter) water. In US units, roughly 1.75 oz Lemon 50, 14 oz sugar, and 1 quart water.
  • Whisk until fully dissolved.
  • Add any inclusions, then process through your batch freezer.
As a Flavoring Powder
  • Dose 50 grams of Lemon 50 per 1000 grams (1 kg) of base, or roughly 1.75 oz per quart of base.
  • Whisk into the liquid base until fully dissolved, then process according to your recipe.
Storage
  • Keep in original sealed packaging in a cool, dry place at 15–20°C (59–68°F), relative humidity at or below 65%.
