Fibraplus is a fiber-based texture enhancer from PreGel, designed as a companion to a stabilizer rather than a replacement for one. The blend of inulin, fructose, and alimentary fibers tightens body, lifts compactness, and tames surface shine in gelato and sorbet.

Added to a stabilized base, Fibraplus pulls finished gelato closer to the dense, matte, slow-melting profile of artisan Italian style. It also adds a modest fiber contribution to the finished product without changing the flavor of the pastes or fruits driving the recipe. The result is a smoother scoop that holds its shape longer in the display case.

Pair Fibraplus with one of PreGel's stabilizers depending on the application. Neutro covers both milk gelato and fruit sorbet in a simple all-purpose blend, SuperNeutro Milk is the specialized hot-process formula for dairy gelato, and SuperNeutro Fruit handles fruit sorbet and water-based recipes.

Instructions

  • Dose 15 g per kg (about 2 oz per US gallon) of finished mix.
  • Dry mix Fibraplus with your sugars and stabilizer, then whisk into the milk, water, or fruit puree.
  • Process the mix through your pasteurizer or batch freezer as usual.
  • Store the dry powder in a cool, dry place at 15–20°C (59–68°F), RH ≤ 65%.
