Description

Cacaopat is a concentrated unsweetened chocolate flavoring paste from PreGel of Italy, built around 50% low fat cocoa with almonds and hazelnuts rounding out the flavor. With no added sugar in the formulation, the chocolate intensity comes through cleanly and the pastry chef controls the final sweetness in the recipe.

The paste is thick, dense, and a deep cocoa color, with a strong, slightly bitter chocolate aroma that lets it carry a finished gelato or dessert without needing additional cocoa. Use it where full chocolate character matters and added sugar would muddy the profile: dark chocolate gelato, low sugar formulations, bitter chocolate sorbet bases, mousses, semifreddi, ganaches, buttercreams, and praline fillings.

Instructions

For Gelato
  • Dose 70 to 100 g per kg (10 to 14 oz per US gallon) of gelato mix. Process in batch freezer.
  • For more intense chocolate character, dose up to 150 g per kg (21 oz per US gallon).
For Pastry
  • Use in mousses, semifreddi, ganaches, buttercreams, praline fillings, and bonbon centers.
Storage
  • Store sealed in a cool, dry place at 15 to 20°C (59 to 68°F), relative humidity at or below 65 percent.
