Roasted Almond is a concentrated almond flavoring paste from PreGel of Italy, built around 35% roasted almonds for the deeper, toasted character that comes from properly roasted nuts rather than raw almond paste. It is used in gelato and pastry where a baked almond profile is wanted.

The paste is thick, smooth, and light brown, with the toasted aromatics of dark roasted almonds and a savory edge balanced by sugar and skim milk powder. Use it as the primary flavor in an almond gelato, layer it with chocolate or honey for traditional Italian pairings, fold it into mousses, semifreddi, ganaches, and buttercreams, or use it as a filling for pralines, bonbons, and layered entremets.
