Description

Gianduia is a concentrated hazelnut and chocolate flavoring paste from PreGel of Italy, built around hazelnuts and cocoa in the traditional Piedmontese gianduia ratio for finished gelato and pastry. Gianduia is the classic Italian preparation where hazelnut leads and chocolate plays the supporting role.

The paste is thick, dense, and a deep brown color, with the toasted hazelnut aroma that defines the style and a cocoa note that rounds out the back palate. Use it as the primary flavor in a gianduia gelato, pair it with milk chocolate or coffee for layered desserts, fold it into mousses, semifreddi, ganaches, Bavarian creams, and buttercreams, or use it as a filling for pralines and bonbons. Instructions

For Gelato
  • Dose 130–150 g per kg (18–21 oz per US gallon) of gelato mix. Process in batch freezer.
For Pastry
  • Use in mousses, semifreddi, Bavarian creams, ganaches, buttercreams, praline fillings, and cream fillings.
Storage
  • Store sealed in a cool, dry place at 15–20°C (59–68°F), relative humidity at or below 65%.
