Description

Whipped Cream Stabilizer is an all natural powder blend with added instant gelatin from Pastry Star that keeps whipped cream holding its shape far longer than cream alone.

Whisked into cream, it locks in the volume and structure of the whip so piped rosettes and borders stay crisp on icings and toppings for cakes, ice cream, and plated desserts. Cream can be whipped ahead and held for service, standing tall through a long display or refrigerated stretch instead of weeping and slumping.

Instructions

Preparation
  • Use 2 to 2.5 oz of stabilizer per quart of heavy cream. A standard batch is 56 grams (2 oz) stabilizer to 907 grams (1 quart) heavy cream, with 40 to 50 grams sugar to taste if desired.
  • In a mixing bowl with the whisk attachment, combine all ingredients and mix on low speed until evenly combined.
  • Mix on high until the desired firmness is reached, then keep the finished cream refrigerated.
Storage
  • Store in a cool, dry place. Do not refrigerate, to prevent condensation.
