Inverted Sugar from Pastry Star is sucrose that has been split into its two simpler sugars, glucose and fructose, and the result is a thick, pale syrup that behaves nothing like the sugar in your bin. It is what bakers turn to when a cake needs to taste as fresh on Wednesday as it did on Monday.

The syrup grabs onto moisture and refuses to let go, so croissant dough stays supple, soft milk breads and sponge cakes keep a moist, close crumb, and caramels, ganaches, and fillings set smooth instead of feeling coarse on the tongue. Beaten into buttercream it melts away without a trace of grit and leaves the frosting silky under the spatula. It also browns a little faster than granulated sugar, which is a quiet gift for crusts and cookie edges.

Instructions

Preparation
  • Substitute inverted sugar for part of the sugar in a formula, using the guidelines below as a starting point.
  • Weigh rather than measure by volume, and warm the portion needed slightly if the syrup is stiff from cold storage so it blends evenly.
For Yeast Doughs
  • Flaky pastries such as croissants: replace 25 to 30% of the sugar.
  • Soft milk breads: replace 30 to 35% of the sugar.
  • White bread: use 20 grams per kg of flour, or about 0.3 oz per lb of flour.
For Cakes and Batters
  • Dry cakes: replace 4 to 5% of the sugar.
  • Cakes and sponge cakes: replace 5 to 10% of the sugar.
For Buttercream and Fillings
  • Buttercream: replace 25 to 40% of the sugar.
  • Add gradually while mixing so the syrup disperses fully through the fat.
Storage
  • Store in closed containers in a cool place, 0 to 10°C (32 to 50°F).
  • Keep the pail sealed between uses, since the syrup readily takes on moisture and surrounding odors.
