Instant Chocolate Pastry Cream Mix is a cold process chocolate pastry cream from Pastry Star that whips up on cold milk alone, with no cooking and no chocolate to melt.

A few minutes on the mixer turns the dark cocoa powder into a deep brown cream, glossy and dense, with a sweet chocolate flavor and a soft buttery note. It pipes cleanly and holds its shape, ready to fill eclairs, napoleons, and fruit tarts, anchor a chocolate mousse, or work as a thickener and stabilizer across other pastry preparations.

Pastry Star offers several cream and custard mixes in the same family. The Instant Custard Cream is the vanilla version, reconstituted with water or milk. Instant Creme Supreme is a freeze and bake stable vanilla pastry cream, and the Creme Brulee Mix is a cooked custard that sets in ramekins under a torched sugar crust.

Instructions

Preparation
  • Whip 4 lbs (1.8 kg) powder with 1 gallon (3.8 L) cold milk until smooth.
  • Refrigerate until set, then use as desired.
