Description

Setagel Vellutina is a cold-process emulsifier and texture paste from PreGel of Italy. The sorbitol-based formula boosts creaminess and stability in gelato, sorbet, ice cream, and pastry batters without changing flavor.

The paste form lets it disperse cleanly into both cold and pasteurized mixes, where it tightens the water phase, lifts overrun, and gives a smoother scoop. It is particularly useful on fruit sorbets, high-fat gelato flavors like chocolate and nut, and pastry applications where you want better emulsification, lift, or crumb structure in almond pastries, sponge cakes, and leavened doughs.

Instructions

For Gelato
  • Dose 4–6 g per kg (about 1 oz per US gallon) of finished mix.
  • Whisk into the cold or pasteurized mix until fully dispersed before churning.
For Pastry
  • Dose 25–35 g per kg (about 4–5 oz per US gallon) of batter or dough.
  • Suited to almond pastries, sponge cakes, and leavened pastes.
Storage
  • Keep cool at 10–18°C (50–64°F).
