Description

Neutro is a powdered stabilizer from PreGel for both milk-based gelato and fruit sorbet. The simple three-ingredient blend improves body, smoothness, and display case performance without altering flavor.

The formula is built around guar gum and rice starch in a dextrose carrier. Neutro disperses cleanly in either hot or cold process and works at a low dose, so it integrates without leaving any gumminess or off-notes.

For higher-volume operations or recipes that want a more specialized stabilizer and emulsifier in one bag, look at SuperNeutro Milk for hot-process dairy gelato or SuperNeutro Fruit for fruit sorbet and water-based recipes.

Instructions

  • Dose at 4–5 grams per liter (roughly 0.14–0.18 oz per quart) of milk, water, or finished mix.
  • Whisk thoroughly into the liquid phase along with sugars to ensure even dispersion.
  • Process the mix through your pasteurizer or batch freezer as usual.
  • Store the dry powder in a cool, dry place at 15–20°C (59–68°F), RH ≤ 65%.
