Description

Pastry 1 Neutral Cristal Glaze is a glossy, ready to use glaze for finishing bakery and patisserie work, especially fruit tarts and Danish pastries. It is a blend of sugars and fruit pectin.

Beyond glazing, it seals baked pastry shells and sandwich cookies and works for filling or icing cakes. Dilute it with water, heat it, then brush or spray it on.

Neutral Glaze is also available by Pastry Star in 20 Lbs pails.

Instructions

  • Mix Pastry 1 Neutral Glaze with 10 to 30% water for brushing, or 40 to 60% water for spraying.
  • Bring the glaze and water mix to a boil.
  • Rest at room temperature for a few minutes before using.

    Sugar, Glucose, Water, Pectin, Citric Acid, Sodium Benzoate, Tricalcium Phosphate, Sodium and Calcium Alginate
