Description

Lemon Curd Mix from Pastry Star sets a tart lemon curd that slices clean and holds a sharp edge. The base reconstitutes with water and butter, then cooks and chills into a firm, glossy filling.

The flavor lands tart and lemony, and the curd firms up enough to fill lemon tarts, lemon bars, and lemon Danishes without slumping. It also holds its own under a blanket of baked meringue, ready for a proper lemon meringue pie.

Instructions

Preparation
  • Combine 14 oz (400 g) base mix with 14 oz (400 g) cold water and whisk smooth.
  • Heat to a short boil, whisking constantly, then remove from the heat.
  • Add 7 oz (200 g) butter and blend well.
  • Pour into molds or baked tart shells and refrigerate at least two hours, until set.
Storage
  • Store in a cool, dry place. Do not refrigerate.
