Cacao Barry Grand Caraque is 100% pure cocoa mass, also known as cocoa liquor, with a rich 53% cocoa butter content from the French house Cacao Barry. The pistoles are unsweetened, carrying pure roasted cocoa and nothing else.

Use them to intensify the cocoa flavor and color of mousses, ganaches, and fondants while reducing overall sweetness, or add them to ice cream and confectionery when you want to push the cocoa profile. They melt cleanly into a base or a finished mix.
