Callebaut C811 is a Belgian dark chocolate couverture with 53.1% cocoa, formed into a solid 11 pound block for shops that chop and melt by the batch. It is the low fluidity cousin of the classic 811 recipe, carrying about 3% less cocoa butter, which makes it the pick for ganache, molding, and flavoring work where a thicker melt is an advantage.
The taste is smooth and round: a solid roasted cocoa body, a pleasant intensity that never turns harsh, red fruit in the background, and a subtle vanilla note on the finish. Melted, it moves slowly and sits heavy on the spatula, so a single pass lays down a sturdy shell when molding medium to large hollow figures, and ganache sets dense and stable enough to slice clean or roll into truffles. It also folds cleanly into mousse, ice cream bases, and brownie batter as a flavoring chocolate, and the block shaves into curls and shards for finishing. Callebaut blends beans from Ivory Coast, Ghana, and Ecuador for a consistent profile block after block.
Callebaut 811 Dark Chocolate Block (54.5%) is the same flavor in a more fluid melt that enrobes thinner and sets faster, while L-60-40 Dark Chocolate Block (60.6%) goes darker and thicker still, with a bitter edge built for ganache, caramels, and large hollow figures.
Instructions
Application
- Chop the block into small, even pieces so it melts uniformly, then melt and temper before molding or piping.
- Use for molding bonbon shells and medium to large hollow figures, where the thicker melt builds a sturdy shell in fewer coats.
- Stir into cream for ganache, or fold melted chocolate into mousse, ice cream and gelato bases, or cake and brownie batters as a flavoring chocolate.
- Pipe decorations that need to hold a defined edge, or shave the block for curls and shards.
Storage
- Store in a clean, dry, odor free area at 12 to 20°C (54 to 68°F) with relative humidity below 70%.
- Keep the block wrapped between uses and away from strong odors.
