Description

Agar Agar Powder from Pastry Star is a plant based gelling agent milled from Gracilaria seaweed to a coarse 100 mesh that disperses cleanly in cold water. It gels at remarkably low concentrations, and once set, the gel holds firm well above the temperature it set at, so a finished piece stands up on a warm counter or display case.

In doughnut glazes it keeps the sugar from crystallizing, so the glaze stays smooth and glossy instead of chipping, cracking, or weeping. In jelly candies and marshmallows it sets a clean, springy bite that cuts with straight edges, and in meringue mixes it adds stability. The powder is fine, off white, and neutral in flavor, so it brings structure without leaving a taste of its own.

Instructions

Preparation
  • Add cold water to the agar powder and stir until it is fully dispersed with no lumps.
  • Heat to 100°C (212°F) and hold for 5 minutes.
  • Mix with the remaining recipe ingredients and allow to cool. The gel sets as it cools, at roughly 34 to 50°C (93 to 122°F).
For Glazes and Icings
  • Hot flat icings: use at about 0.2% of the recipe weight (2 grams per kg, or roughly 0.3 oz per 10 lbs).
  • Doughnut glazes: use at 0.5 to 1.0% (5 to 10 grams per kg, or roughly 0.8 to 1.6 oz per 10 lbs) to prevent sugar crystallization and reduce chipping, cracking, and weeping.
For Confectionery
  • Jelly candies and marshmallows: use at 0.3 to 1.8% (3 to 18 grams per kg, or roughly 0.5 to 2.9 oz per 10 lbs), adjusting within the range for a softer or firmer texture.
  • Meringue mixes: add at the desired level to stabilize the foam.
Storage
  • Store sealed in a cool, dry place.
