Strawberry Extra is a thick, deep red topping from PreGel's Arabeschi line, made for gelato and ice cream at service in cones, cups, sundaes, or scoops. It sits up in a defined band across a scoop rather than thinning out and running to the bottom of the dish.

Strawberries make up 28 percent of the paste, so the flavor lands tart and jammy instead of candy sweet, with enough acidity to cut through a rich cream base. Agar agar and modified starch hold that body steady, so the fruit stays where the server puts it and keeps its color against white and golden bases. A case holds six 2.2 lb bottles.
