Description

Pastry 1 Pastry Cream Powder, also known as Hot Belcreme, works two ways. On its own it makes a complete cooked pastry cream, and it also serves as a stabilizer for custards, flans, and thickened hot milk preparations in place of cornstarch or flour.

It produces a smooth, highly stable base that holds added cream and egg, so fillings for cakes, tarts, and pastries set cleanly without splitting or collapsing. Also available as a Cold Process version.

Instructions

  • In a heavy saucepan, dissolve 250 grams (1 1/4 cups) of sugar in 1 liter (about 1 quart) of milk.
  • Separately whisk 2 large eggs with 80 grams (about 4 yolks) of egg yolk.
  • Bring the milk mixture just to a boil.
  • Temper the eggs into the milk mixture.
  • Return to moderate heat, stirring until the desired thickness is reached.
  • Refrigerate.
