Description

Hot-process lemon curd powder from Pastry 1, packed five 2.2 lb (1 kg) bags per 11 lb case. Whisk with water, bring to a boil, finish with butter, and chill to set a smooth, bright lemon curd ready for tart shells, layer cakes, verrines, and viennoiseries.

The powder delivers a clean, tart lemon flavor backed by real lemon juice and lemon oil, with a soft, spoonable set once cooled. Yield, sweetness, and acidity stay consistent batch to batch, which makes it well suited to production kitchens and pastry programs that need a reliable curd without breaking out the double boiler.

 

Instructions

  • Whisk 500 g (1.1 lb) Pastry 1 Lemon Curd Mix into 500 g (1.1 lb / about 2 cups) cold water.
  • Bring to a boil, then remove from the heat and stir in 250 g (8.8 oz) softened butter until fully incorporated.
  • Pour into serving dishes, tart shells, or piping containers and refrigerate at least 2 hours, until completely set.
  • Store the dry mix in a cool, dry place at 59 to 64°F (15 to 18°C).
