Description

Take the hard work out of making consistent sorbets with this pre-made mix from Italy's Gelatech. A water-based cold process mix, Gelatech 'Gelmix Cold-50' gives you a convenient and easy-to-use base for creamy and flavorful sorbets, as well as dairy-free gelato.

Instructions

  • Mix 50 grams of Gelmix Cold 50 with 280 grams of sugar.
  • Whisk 1 liter of water into the Gelmix/Sugar mixture until well dissolved.
  • Add 130 grams Gelatech Flavoring Paste as desired.
  • Process in your batch freezer.
  • Alternatively, to make a sorbet using fresh or frozen fruits, follow the instructions above with 50 grams of gelmix, 250 grams of sugar, 500 grams of water, followed by 500 grams of fresh or frozen fruit, and 70 of Gelatech Flavoring Paste.
