Bilberry Fortefrutto is a concentrated flavoring paste from PreGel of Italy, made with 35% real bilberries, the smaller and darker European cousin of the North American blueberry. It is used in gelato, sorbet, and pastry production where a deeper, more concentrated blueberry flavor is wanted.

The paste pours thick and smooth, with a deep purple color carried by the fruit itself and a typical bilberry aroma that lands somewhere between blueberry and blackcurrant. Use it as the lead flavor in a sorbet or yogurt gelato, swirl it into vanilla or cheesecake bases, or fold it into mousses, glazes, and entremets where a rich berry note is wanted.
