Description

Callebaut Extra Brute is a Dutch process cocoa powder with 22 to 24% cocoa butter, packed as six 1 kg bags in a 13.2 pound case. It is the cocoa powder pastry chefs reach for when color matters as much as flavor: a deep, dark red powder that turns a cake crumb mahogany and gives a glaze a rich, burnished redish brown.

Alkalizing lifts the pH to 7.7 to 8.1, which tames the natural acidity of cocoa and rounds the flavor into something full, warm, and intensely chocolatey with none of the sharp edge of a natural cocoa. The high fat content is the other half of the story. It gives sponges, sables, and brownies a tender, moist crumb, keeps mousse and ice cream smooth, and lets the powder bloom into a glossy, fully dissolved paste for sauces, hot chocolate, and mirror glazes. A dusting over truffles, tiramisu, or a plated dessert reads as a rich russet rather than a dull brown. The 1 kg bags suit shops that open a fresh bag at a time and keep the rest sealed.

The same powder comes in a 22 Lbs case of two 5 kg bags. Callebaut Natural Cocoa Powder 10/12 is the non alkalized choice, lighter in color and brighter in flavor, for recipes leavened with baking soda. From Cacao Noel, Black Cocoa Powder is alkalized further for a near black color and mellow flavor, and Cocoa-Sec Humidity Proof Cocoa Powder is a dusting cocoa that won't melt or streak on moist surfaces.

Instructions

Application
  • Sift with the dry ingredients for cakes, brownies, cookies, and sables. Extra Brute is alkalized, so pair it with baking powder rather than baking soda unless the recipe says otherwise.
  • Whisk into hot liquid or fat to bloom the powder before adding to sauces, hot chocolate, ice cream bases, mousses, and glazes for a smooth, fully dissolved result.
  • Dust over truffles, tiramisu, and plated desserts through a fine sieve for a deep russet finish.
Storage
  • Store in a clean, dry, odor free area at 12 to 20°C (54 to 68°F) with relative humidity below 70%.
  • Keep the bag tightly closed between uses; cocoa powder absorbs moisture and odors readily.
