Description

Apple Pectin from Cuisine Tech is a high methylester pectin made in Germany, packed in a 1 lb cardboard cylinder. It is the working pectin for sugar-set preserves, fruit pâtes, and any preparation that gels through the combined action of pectin, sugar, and acid.

The pectin is standardized with dextrose for consistent dosing batch to batch, giving a clean set with the firm, sliceable texture associated with classic French pâte de fruit. Use it for fruit jellies and confections, jams, marmalades, glazes, and bake-stable fruit fillings. It also serves as a thickener and stabilizer in coulis, fruit purees, and chutneys where a softer set is preferred.

Instructions

For Pâte de Fruit and Fruit Jellies
  • Use roughly 20–25 grams of pectin per kilogram of finished product (about 0.7–0.9 oz per 2.2 lbs).
  • Premix the pectin with a portion of the sugar (at least four times the pectin weight) before adding to warm fruit puree, to prevent clumping.
  • Bring to a boil, add the remaining sugar and glucose, then finish with the acid (citric or tartaric solution) off the heat to trigger the set.
For Jams, Glazes, and Fillings
  • Dose 5–15 grams per kilogram (about 0.18–0.5 oz per 2.2 lbs) depending on desired firmness and the natural pectin content of the fruit.
  • Premix with sugar before incorporating to avoid lumps.
Storage
  • Store the cylinder sealed in a dry place at 15–20°C (59–68°F). Reseal tightly after use to keep the powder dry.
