Gelita Gold Leaf Gelatin from Germany is a firm set sheet gelatin in a 2.2 lb (1 kg) carton. With a bloom strength of 185 to 230, it produces the clean, firm set that professional pastry kitchens rely on for jellies, panna cottas, mousses, marshmallows, terrines, and aspics.
Colorless, odorless, and flavorless, Gold leaf gelatin dissolves cleanly into hot liquids and yields a clearer, smoother finish than powdered gelatin at the same dosage. The sheet format gives precise portioning by weight, no measuring or dispersing required. Made from pure collagenous protein, it is fat free, carbohydrate free, and allergen free.

Instructions
Preparation
- Bloom the sheets in cold water for 5 to 10 minutes until soft and pliable.
- Lift the sheets out, gently squeeze to remove excess water, and add to a hot liquid (above 50°C / 122°F) to dissolve.
- Stir until fully incorporated, then combine with the rest of the preparation and chill to set.
Dosage
- Typical use: 2 sheets per 250 ml (1 cup) of liquid for a standard set. Adjust up or down based on the firmness required.
Storage
- Store sealed in a cool, dry place at 15 to 20°C (59 to 68°F), away from direct light and strong odors.
