Malt Products Glucose Syrup 42 DE is a professional grade confectioner's syrup produced in the United States, supplied in a 60 lb pail. The 42 DE rating (dextrose equivalent) indicates a medium level of conversion, giving the syrup moderate sweetness, medium viscosity, and a balanced freezing point depression.

These properties make it the standard choice for caramels and soft candies, gummies and hard candies, bonbon centers, ganaches, nougat, marshmallow, gelato, and pulled or spun sugar work. It controls crystallization, controls water activity, and contributes body and chew without excessive sweetness. The 60 lb pail is sized for high-volume production and is kosher certified.

Instructions

  • Ready to use straight from the pail.
  • Store between 18–27°C (65–80°F) at less than 70% relative humidity, in original sealed packaging.
