Description

Pastry 1 Glucose Syrup, also known as confectioner's syrup, is a 42 DE liquid sugar from Italy in a 22 lb pail. It is one of the most useful confectionery ingredients, ready to use straight from the container.

With moderate sweetness, medium viscosity, and a balanced freezing point depression, this syrup controls sugar crystallization in ice creams, sorbets, caramels, nougats, gummies, and spun or pulled sugar work. It also sweetens, stabilizes, improves volume, and adds mouthfeel across pastry, confectionery, and frozen dessert applications. The Pastry 1 syrup runs a touch thicker out of the pail than typical 42 DE syrups; a brief warm in a water bath brings it to the same workable consistency.

Also available in 11 Lbs Tubs from the same producer, or in 60 Lbs Pails from Malt Products for high-volume production. All three are interchangeable in formulation.

Instructions

  • Ready to use straight from the pail. Warm in a water bath if a more fluid consistency is desired.
  • Store dry and cool, 20–22°C (68–72°F).
  • After opening, protect from heat and reseal the lid.
