Description

This white chocolate glazing compound from French company Cacao Barry is low in cocoa fat and so does not require tempering. It is easy to work with and sets with a glossy sheen and a semi firm bite.

Warm it before use and it is ready for coating, enrobing, or drizzling over fruits, candies, petit fours, and other bakery and confection work. Also available in Brune (Dark) and Blonde (Milk) chocolate varieties.

Instructions

  • Warm gently until fluid before use. No tempering required.
  • Coat, enrobe, or drizzle, then place on parchment or a rack to set.
