Ocoa 70% is part of Callebaut's Pureté range, made by a unique new fermentation process that brings out the natural character of the cocoa beans. Offering a similar profile to their popular 70-30-38 couverture, Ocoa 70% is perfect for adding bright cocoa intensity to recipes. It's best for molded and enrobed confectionery, but also great for patisserie, dessert, and bakery applications. Pairs well with paprika, cinnamon, vanilla, Jamaican pepper, cloves, blackcurrant and pear.
