Bittersweet chocolate with dark cherry overtones
I buy Callebaut 70% bittersweet mostly to nibble because it is a superior chocolate. Delicious, smooth, dark with what I would describe as dark cherry overtones. My favorite bittersweet chocolate. I use the chips leftover from cutting up a block for baking... it's not a 1:1 substitute for semi-sweet, but you can go 50:50 with semisweet and have a darker, richer result.
Callebaut is a great chocolate
Whether for baking or just plain eating, Callebaut chocolate is one of the best. I've been purchasing the 54% 11-lb. block for a few years and decided to purchase the 70% 11-lb. block when I saw that its price was nearly $20 below any competitor's price. I split the blocks up three ways to share with my daughters and their families since they all enjoy doing a lot of baking and making desserts, especially with chocolate. Besides desserts, you can make hot chocolate with it, chop it up to use in trail mix, melt it to drizzle over ice cream, shave it into hot coffee, or create any number of other tasty foods and beverages.
