Pre-baked, all-butter sweet fluted tart shells from Moda, made in Spain. These uniform 1.75 inch (4.4 cm) tart cases come ready to fill, with crisp walls and an elegant scalloped edge.
The pastry combines wheat flour, butter, glucose syrup, and sugar for a sweet, buttery base that holds up to wet fillings. Use them for petits fours, passed desserts, and buffet trays filled with ganache, lemon curd, pastry cream, fruit, or frangipane. The fluted edge gives a more finished look than straight-sided shells of similar size, useful for catering work where presentation carries weight.
Instructions
- Use straight from the case, or glaze the interior with melted cocoa butter or white chocolate to extend hold time against wet fillings.
- Fill close to service to keep the pastry crisp.
- Store the unopened case in a dry place at 15–18°C (59–64°F).
