This shelf-stable alternative to fresh egg whites can be used in a wide array of desserts and sweets. A combination of powdered egg whites, sugar and stabilizers, Pastry 1's Meringue Powder is great to have on hand in the pantry. A highly efficient option, it saves time and food waste when compared to whole eggs. It also provides increased stability in baked goods such as cookies, pavlovas and macarons.

Instructions

  • Dissolve 100 grams of Pastry 1 Egg White Powder into 1 liter of warer.
  • Whisk until the desired volume/stiffness is reached.

  • For Meringue Shells Dissolve 35 grams of Pastry 1 Egg White Powder into 250 grams of water, then whisk while gradually adding 500 grams of sugar.
  • Whisk until the desired volume/stiffness is reached.
  •  
  • For Meringue Topping Dissolve 30 grams of Pastry 1 Egg White Powder into 250 grams of water, then whisk while gradually adding 450 grams of sugar.
