Callebaut CW2 is a top quality Belgian white chocolate with a rich 25.9% cocoa content and a 2 drop fluidity. With slightly less cocoa butter than Callebaut W2, it is a firmer, versatile choice for bakery work.
Use it for mousses, cremes, ganaches, and fondants, and for enrobed confections and decorations. Callebaut roast the cocoa beans whole to retain the subtle flavors, even in the cocoa butter, and the result is a sweet, deliciously milky white chocolate.
