Naturally-derived xanthan gum powder is a widely-utilized thickening agent, used for adding stable volume and viscosity to both cold and hot products. When added to frozen preparations, such as ice cream, it inhibits the ability of water to form undesired crystals, resulting in a smoother texture and mouth feel.
