Blonde chocolate was first developed by French cocoa pioneers Valrhona in 2012. It's essentially white chocolate, but the cocoa butter is caramelized to give the couverture its rounded biscuity flavor and golden hue. Valrhona Dulcey 35% Blonde comes in easy-to-melt feves discs, making impeccable ganaches and crémeaux, as well as fine molded and coated confectionery, desserts, and ice creams. Pairs well with sea salt, coffee, hazelnut, banana and apricot. Kosher certified.
