Superbly versatile, Valrhona's 36% Caramélia will lend your sweet creations a sophisticated richness. It's particularly suited to molding, but also great for mousses, crémeux, ganaches, glazes, and ice creams. Pairs well with nuts, citrus or exotic fruits, ginger and cardamom.
